Round cake "Football" – apple filling cake

Ingredients:

For the cake:

  • 6 eggs
  • 120 g sugar
  • 100 g flour
  • 50 g ground walnuts
  • Grated zest of 1/2 lemon

For the filling:      

  • 2 apples
  • 1 vanilla sugar packet
  • Squeezed juice of 1/2 lemon
  • 4 yolks
  • 100 g sugar
  • 6 gelatin leaves
  • 400 ml cream
  • Clove
  • Cinnamon

Instructions: separate egg yolks from whites and mix them with grated lemon zest and 1/3 of sugar. Whip egg whites until stiff, add other 2/3 of sugar and mix with yolks. Add flour and ground walnuts. Pour the batter into cake mould or half-sphere mould and bake. When it is done, cut the cake in 3-4 layers. Cut apples into chunks and cook in lightly sweetened water with lemon juice, vanilla sugar and a bit of clove and cinnamon. Blend the cooked apples and sift them. Briefly boil yolks and sugar in 200 ml of apple juice and add apple puree and gelatin softened in cold water. Let the filling cool down and then mix in whipped cream. Evenly spread the filling on the cake layers and allow it to cool for at least two hours. Spread whipped cream all over the top and sides of the cake and draw a football pattern with a toothpick. Use chocolate frosting to make pentagons for football decoration.
